Flapjack Fridays: Scrounging and Sorting

Unless there’s a recipe that we’re cooking for a special occasion, we typically buy regular staple foods and see what we can do with them. For today’s Flapjack Fridays, we were busy because of trying to get ready for a weekend trip, so we did puffed pancakes again (recipe here: http://thispapership.com/flapjack-fridays-pear-puffed-pancakes minus spices and spears); for variety, we crumbled 1/4 of an 8-ounce block of feta cheese and sprinkled cracked black pepper on top before putting it in the oven.

Note: these particular pancakes were somewhat dry and would have been even better with the addition of tomatoes, sliced thin and placed on top after baking, but Joel was feeling both lazy and rushed this morning. So our old standby Texas Pete rushed in and saved the day, as he always does.
